From what I've been researching it looks like I should use a 185* sensor putting it in the manifold with a 180* thermostat for a electric fan setup. I'm a little confused.. Maybe some one could explain. I use a 185* sensor that turns on the fans at 185* and off at 165* when the thermostat closes at 180*. How does the fans cool down to 165* when theres no coolant flow below 180*. The sensor would have to read 165* in the manifold to turn off. How would it turn off? I think that would be too cold. Thanks.......????

get a hotter thermostatic switch- say, 200 on, 190 off. this way, if your radiator is up to the task, the fan won't be running when you are going down the highway.
if you don't mind having "old" parts on your car, you can get a complete fan wiring harness with a good relay and even a fusible link on the power wire from a mid 80's GM car- i got the one for my Monte from an 85 Celebrity with the 2.5 "iron Duke" 4 cylinder engine- and head to NAPA and look thru the book and find a switch with the rating you want, which will cost about $20. the switch in the Celebrity was something like 225 on/210 off, but the one i got from NAPA with the same plug is 200 on/190 off and i've got a 185 thermostat in the car. the fans kick on at low speeds, but shut off when the road speed is jamming enough air thru the rad to keep it cool.

looks like some of the bases are covered here .

Sounds like you might be running twin fans ...as the other gent stated napa has the thermo switchs in different ranges and the one you pointed out on summit on at 195 and off at 185 may be a good choice .. this way you can run your 180 t/stat and it wont conflict with the fans off point ... along with short cycle times of the fans .. hook both fans up together for best results ...if you have A/C toggle the lead to ground to over ride the thermo switch to cycle when you want ....as the relays are only looking for ground contact to cycle or when you turn on the A/C flip the toggle at the same time .
