So, I am assembling a 502 bowtie block. What would be a good combination of parts (with part numbers please, or a link to the parts) that would be able to run on 87 octane fuel, or 89 octane would be okay, and still produce impressive power, if this combination is possible ? Thank you.
 
I would try to run in the 9:1 range with alum heads and contact Chris Straub for a cam. That would probablt get you where you want.
 
Do you only have a block? The ZZ502 and 502HO both make good power and run on lower octane.
 
In that case I'd build a 540, get a stroker crank since it will cost about the same in the end. That will allow huge power with lower compression, Wolfplace had very good pricing when I was researching a 496. He's probably not too far from you either.

540 would be bored .050 over or is it .030 over ? Math is my worst enemy... Guessing is where i'm at with this :D
 
4.5 bore would be about .30 on a 502.
 
4.500" bore and 4.25" stroke is 540 cui. 502 use 4.47" bore and 4" stroke. If you only has the block and is going to buy a new rotating assembly go for 4.25" stroke and contact Mike Lewis aka wolfplace he is great to deal with great prices and first class customer service he will answer all you need to know.

Then your block is meant to be honed to 4.5", some pistons need a little less clearance so it gives you options. A 4.5" stroke might not slip right it, probably quite a bit of clearancing required.
