I currently have a 10bolt 7.5" 2.73 open rear and just bought some 3.42 gears. The guy gave me the shims that were installed in the rear and said I should be able to install it right back in and have it fit good with the same shims in my rear. Is this possible once I get a 3 series posi carrier?
carry over diff shimming to different rear possible?

No it is not normal. Almost every time you change the gears or the differential in a rear end you will have to make shim adjustments. Some people get lucky with this kind of stuff and the original shims are close enough that the gears don't make much noise, but that is not the correct way to do it.
