Replacing an Aftermarket Temperature Gauge

I've owned my 454 Chevelle for over 30 years and the previous owner had a set of aftermarket gauges installed under the dash, standard-looking 2-inch temp/volts/oil pressure tri-gauge setup. They were becoming inaccurate so I bought a replacement set. As I'm removing the old set, the sender wire on the water gauge seemed thick and stiff. It looks like it's an actual water line coming from the block. I didn't even know this was a thing. Glad I didn't cut the end in the cabin!

Anyhow, I've attached a picture of where the far end up the line it is mounted on the passenger side of the engine block. It seems like it's a half-inch fitting threaded into a bigger fitting that's screwed into (or permanently part of) the engine.

My plan is to soak the crap out of it in penetrating fluid and after draining the radiator, unscrew the smaller one from the bigger one. I just wanted to see if anyone could confirm this is what I think it is, because if it's one big piece, I'll break me or it doing this they way I planned.

Thats a capillary tube; not a wire. It is permanently attached to the gauge.
Are your new gauges electric? If so you will have a sending unit and wiring to install. If you can, install the new one using a port on the intake manifold.

The picture above by the thermostat looks great, but there's no location like that on the stock 454 intake. I'll be re-installing in the same location. It will have to be more accurate than the old gauge which said 180 on a cold start and over 230 at normal operating temps.
