Without a doubt use the 750. Jet it somewhere between 73/81 to 75/83 with the rear power valve blocked obviously. Probably a 6.5" power valve in the front with that cam and that wide a LSA.
 
For your combo I don't really think you gain anything with the 850. Like I have said before my combo only gained .03 in the 1/8th with a 950HP over my 750HP on my 460. From other tests we have done the 1000HP would probably only be that much or less. So that equates to about .06 with the 950HP and maybe .1 for the 1000HP in the 1/4. But my combo has a 4.10 gear, 4900 rpm stall, and solid roller shifting at 6400. A bigger carb on your combo is going to hurt you as much down low as it gains up top in my opinion. Even at the track. If there were any gains they would be very minimal. As in less than .1 in the 1/4 and likely less the .05.
