I have an 82 El Camino that has most of the AC components removed. I'd like to finish the job by swapping out the huge ugly AC suitecase in favor of the smaller heater box for non-AC cars. Can this be done with the right heater box and controls? Anyone have any experience with it ect?

Go with vintage air. Then you get both heat and cool and its out of sight. Place a smooth piece of metal over your big "suitcase" hole in the firewall and your set!
 
IIRC the firewall is different between the 2 (basing the info off my Monte SS ownership). I believe non A/C is a horizontal rectangular hole while the A/C cars had a more vertical looking hole under the case. A quick way to check this is a trip to the local junkyard and see if you can find a model of each .
