Could the weight difference be made up with fiberglass pieces parts?

Sure they can but fiberglass isn't good for the street ,it doensn't look good.

Fiber hood/fenders/bumper,take out the inner fenders,switch to an aluminum radiator,aluminum wheels with smaller tires hows that.
