Both do a very good job at removing the paint. Soda however doesn't necessarily remove the rest as well as acid. It can leave lots of powder behind that you will find for years. Acid dipping can also leave behind acid if not cleaned well, that will show up by bubbling paint. The dipping will however get the hidden "inside" rust. Ive never had the acid dip but know people that have, I have only had media blast and am happy with everything except finding the media still.
 
Had my stuff dipped and ecoated by E-coat king here in Michigan a number of years ago. After 2 years, door were rotten from the inside out, 6000.00 dollar paint job ruined. I would never never dip any metal piece unless its flat sheet of metal. I've owned the car for 27 years with those doors and never had any rust issues. The door skin pinch weld around perimeter of door was completely swelled and filled with rust, also started to bubble on exterior of door along all edges.
 
I have no experience with either, but the one thing that stuck in my head from all I have read about both is this...Acid dipping will remove everything, including the rust protection that lies in area that you may not be able to coat with new rust protection. Soda blasting will not get in these hidden areas, but then you may not want to disturb areas that you cannot get to if they are not corroded...I guess the method would entirely depend on what you can refinish/replace during the body prep protion of the job.

I think the problem I had in my situatation was that my parts were not properly nuetralized after the dipping process. I also noticed that the moron did not flush the bottom of the doors out and e-coat all of the dirt and sediment into the bottom of the door. I had to sand blast and clean this area out and then recoat with dp-90. I have scene this in acid dipped material before. The pinch weld area around the door was a case of not nuetralizing the part . There were area around the pinch weld up high in the door that I could work the end of a paper clip through the metal because it was completely rotted out in 2 years. This owner of Ecoat king told me that he got out of the buisness because allot of expensive sheet metal was getting banged up and dented. The unfortunant thing is the guy that was doing his acid dipping has now taken over the buisness and is currently operating an ecoat buisness. I say this so that others do not go through the nightmare that I went through with a process that was not performed properly. I'll also add that my painter was dead set against dipping anything because he has scene the same thing in dipped parts.
 
All the paint and body work on my car was done at wings auto art, Nyle will only soda blast as he has NO faith in a quaility rinse cycle from anyone dipping. just ask around and you will hear the horror stories of this **** wicking and weeping causing big problems in nice paint jobs! one thing for sure, soda will NOT do this. The local dipper in our area has to remove all vin tags because they or the rivet will be ruined by the chemical. A big no no if you have a car thats original.
