There is a SMALL (pinhole) stream of water shooting at the header primary where a head bolt meets the head surface. I used sealer on ALL the bolts. Would it be a problem to un-torque the one bolt and re-seal then re-torque, or try an alumaseal product??

Not a huge issue. You will have to drain some water out to get it down below that level. Then just pull the bolt, reseal, and then reinstall and torque it. I have had this happen before and end up just having to use teflon tape on the bolt to seal it up.

A "stream" of water shooting out from between the head and block???

First Guess: That's not something more sealer on the threads is going to fix.

I'd be looking for a defect on the head or block deck surfaces that prevents the gasket from sealing...or...there's a small crack that is allowing the water to escape.

Yup, as said, worth a try; could have acrack in the head under the bolt, but prolly not. Let's hope so.

Put the sealer on the threads, and under the bolt head and between the bolt & washer as well. Fill every possible crack that water could get through with it.
