I have 245/45/17 tires on 17x8 wheels, 5x4.75 (5x120.65) bolt pattern, close to zero offset. My tire height/diameter is close to 26”.
I think some people use the 2013 Chevy equinox spare tire, 145/70/17, 5x120 bolt pattern, which is nice because it can clear the LS1 brakes I have and has a similar tire height (diameter). BUT due to the offset (might be 45mm offset) the wheel is about 7 inches high when laying flat.
I prefer a total wheel/tire width of 6 inches so it can easily slide in and out of my modified smugglers box.

Do you know of a 17 inch spare tire that has an offset closer to zero?

Check your local junkyard to see if they have a spare from a 98-02 Camaro or Firebird, then replace the tire. They might have less of an offset, and are made for your brakes so being 16" shouldn't matter.

Don’t you think the spare tire in the photo looks cooler? 😁 Also, I’m looking for a 25-26” tire and be able to find replacements easily.
