i am setting up the wiring for my dual electric cooling fans I saw a post here about running the positive cable through a fusible link directly to the fans and ground the fans through a relay that is triggered by a coolant sensor. I was also going to run a relay from the fan switch for the air conditioner so the fans go on when the a/c is on. Is there any disadvantage to doing it this way? I would think it would be a safer method of connecting the fans.

I am not a fan of using fusible links for cooling fans. This can put you out of business on a more permanent basis. My recommendation is to use an appropriate breaker. Next is inline fuses.
