I know there are many partial patch panels out there for sale for 1968-1969 convertible Chevelle's -
The car had patches put in back in the late 80's - early 90's and due to a decent sized dent in one; I thought about replacing the quarter.

What experience have you had and does anyone have recommendations? Thanks

I guess that depends on the overall condition of your quarters - i.e. are they reparable or beyond repair. I replaced both quarters on my '69 convertible a few years back with patch panels. Mine were gone - mounds of bondo and poor patching. The outer wheel houses were in rough shape as well, so I had to replace/repair them. As you know, there aren't any repo convertible quarters available, so using couple panels I had to patch them in a couple of inches below the top edge.

A quarter panel skin covers a large area. It takes a skilled welder to install one. I got lucky and found someone who does this all the time.
A full quarter is just as tough, maybe harder to install. It takes a lot less welding but getting the gaps at the door and trunk correct can be a challenge.
I would go down the road of whatever repair is easier for the guy you find to do it.
Here is a skin :
