My rule of thumb when buying a restored car from a stranger is to value the engine at core value unless it's fully documented by a reputable builder.

Buyers that make offers on my cars for sale seem to do the same.

Build what you want, if looking to flip this car do it cheap and let the next guy spend the extra money. If you are keeping it to drive, build as much crazy into it as you can afford. I had a 66 SS numbers matching car I took the four speed out of it and put in a modern automatic. It’s a way faster car now night and day difference with the quickness. I sold the four speed and it just about payed for the improvements, your car your money. Do what makes you happy.
