1995 gmc3500 454

What should my truck be idling at and what should oil be at on gauge. Has 178196 miles on her

What is your truck idling at and what is the pressure at idle when hot and at cruise when hot? Have you seen a decrease in oil pressure recently?

It idle's at 1000 rpm and oil is about 35 to 40 pounds and when Crouseing it is about 70 pounds

Idle is way high, or tach is inaccurate.

Oil pressure is normal-to-high, or gauge is inaccurate.

My Gen VI idles at around 600 - 700. Your pressure is fine if your gauge is good, which is actually rare. 10psi per 1000rpms is the rule of thumb, so anything above 10psi at idle is technically OK as long as it rises with revs. Nothing I own or drive drops below 30psi at idle and two of them have well over 200K on the ticker.
One of the reasons the big block Chevy is so popular is its almost bulletproof oiling system. I've had good luck with Gen VI stuff with priority main oiling. I don't know that it'll ever come into play, but I like the peace of mind knowing that if I lose a lifter, the mains will still receive pressurized oil.

Is that 1000 RPM reading in Drive or is that a Park/Neutral RPM ?

You may have a throttle body base gasket leak, spray some carb cleaner around the base of the throttle body with the engine running and see if the idle calms down, good luck!
