Tag vs. car completion v build sheet 1970

What is the difference in time between the body build date on the trim tag vs. actual completion v build sheet. looking to buy an SS in the near future and just trying to learn as much as possible.

Painted car bodies complete with windows & door panels are sitting in the body bank at Fisher Body (likely just a hole in the wall to another wing at the factory). In my case my '67 body has a date of 12-13 and the car was completed (& shipped) 12-15. There could be slightly bigger gaps in the date but I can't see a smaller gap.

Engines are another study unto themselves. Sometimes the engine predates the car by only 2 days, sometimes several weeks. It may have depended on the factory and how they stocked engines, or perhaps obscure engine codes sat around waiting for an order. My engine was built in St. Catherines 12-12 and the completed car rolled off the line 3 days later in a factory over 100 miles away.
