Jeff,

NOS means (New Old Stock) That is original parts made by GM that they don't make anymore
..........I was told that the Goodmark panels are great in thickness and fit for a 70 Chevelle. I am about to replace a Quarter with a Goodmark myself.

So goodluck!

Fathom is right.
NOS stand for Old stock parts, that are new.
That means that they were never used, and (in most cases) still in the original box.
A NOS fender is a fender that GM manufactured 30 or so years ago.
That makes it original, and exactly the same.

The ones that Goodmark has are Reproduction.
Meaning they took the original fender's specification and shape and reproduced a new one.

They are NEW, but they are OLD also....and subject to normal shelf life problems depending on how they were stored., and many times the NOS parts, especially Big Parts like quarters and fenders and the like, were factory rejects...ie., had some minor flaws and so that's why they were left on the shelf....not always, but sometimes..... and of course NOS is always going to be alot more money!! Worth it.
