generally speaking...when do you braze something vs. arc weld?

Brazing is not recommended in situations where structural integrity is paramount. You don't braze suspension components you weld them. You don't weld radiators, transmission coolers etc. you braze / solder them.

Oman hit the nail on head, you weld when a stress is going to be placed on the item. Braze when it just needs to be held together. A Weld melts both metals and adds a third. Usually making the joint stronger than the metal itself. A braze just sticks to the surface, and does not melt the two items being joined. The joint will usually be weaker than the metal it has joined.
