A while back I found a spring necessary to keep my cancelling cam in place when I install my steering wheel over it (custom LeCarra wheel) but now the spring makes a slight grinding noise when it rubs up against the wheel as I turn. I feel like even if I were to put some grease in there it would still eventually be the metal on metal contact and start to grind again. Anybody have any suggestions on a solution? Is there a plastic washer or something that supposed to go in there? Also...what's the best grease to use for this kind of thing?

The spring shouldn't be moving in relationship to the wheel. The cancelling cam, spring and steering wheel should always be in the same relationship to one another.
If the wheel is grinding against the spring, you have a larger problem and I would assume the cancelling cam is not turning with the wheel either.
More than likely, though, the griding you hear/feel is coming from another source. Check the upper and lower steering column bearings for adequate grease. One is in the turnsignal switch and will be visible when you remove the wheel and cancelling cam. The other is at the base of the column housing where the steering shaft exits the column tube out in the engine compartment.
Another item that could be causing grinding is the horn contact button spring. If the contact or contact retainer has worn out of come loose the spring that keeps the contact in place can come loose and jam in the turnsignal switch and cause problems. But I'd check the bearings first.

I'll take a look but that's a brand new turn signal switch in there that I installed myself so I'm pretty sure the bearings are cool...what kind of grease should I use for that anyway (I'm a newbie)

White lithium grease would be what you want to use.

I just keyed into the fact that you are using an aftermarket wheel. Check to make sure the wheel and the adaptor hub are not interferring with the column cover or other column components.
