Follow this link (http://www.edelbrock.com/automotive/eps_sect2.html) to the Edelbrock Carb tuning procedures. It explains everything much better than I can.
I think the stall around corners is the float level. The hesitation could be caused by several things. Here's a link to the troubleshooting chart (http://www.edelbrock.com/automotive/eps_troubleshoot.html).
And this link (http://www.edelbrock.com/automotive/eps_intro.html) is the main page for the entire manual.

For me it was a combination of things. 1. Fuel pressure was too high (7.5 psi at idle) and 2. Floats were not set to correct height from factory. This has been the case on my last two Edels. with the floats. Always a good idea to pull the horn off and check floats and also ensure that you blow any and all debris out of the carb with compressed air. Sometimes dirt or pieces of packing material get stuck in the nooks and crannies.
Chad is the man and gave you the links you need. The carb should have come with the same tuning and troubleshooting material as well. But I would start with pressure and floats.
