I have spal twin 11" fan set up. Currently I have them wired up with two 40 amp relays on a togo switch. This works fine, but I'd rather have them come on and off automatically. I also have an electric temperature guage.
So, is there a set up I can buy where I just run a wire off my current temp guage sending unit? And since I already have the relays, I don't need those either. All the kits I see seem to include both.

I remember reading about a company that sold a temp control switch (only) pretty cheap. it closed the contact at one temp and opened at another, so it didn't need any control box.
I have never heard of using 1 sender for a gauge and controller. most senders only change resistance with temp, so you sould need some kind of control box to control the fans. also, two things reading the resistance of one sender at the same time would probably cause problems, so you will probably need one for the gauge and one for the fans.

I've never seen anything that taps off the electric guage sender while still letting the guage work either.
You can get switches for stock applications since many new fans are electric. Find a parts store that has a catalog and will help you find one with the correct temperature operation and thread. Then, you can get a thermostat housing with a sensor bung in it so you can install the sensor there if you don't have any other place for it. That's all I can suggest.

I just wanted to use the sending unit that the guage use to have less clutter in the engine compartment. One less port in the intake.
Wouldn't the sending unit for the e-fans do the same thing? Just tell what the water temp is?
Which is why I figured I could just use it.

This may be overkill, but I have Windstar fans on my 69 with a thermal switch to turn on the small fan at 185, and the large fan at 200. I brazed bungs into the radiator side tanks to install them. Both fans have override switchs to turn them on manually, and the large fan will also come on when the A/C compressor is on. Total setup includes two sensors, 7 relays, two switches and lots of wire. It works great, the only thing I may add is a delay circuit to keep the small fan running a short time after the ignition is turned off. (Never let an engineer near your car- the impulse to overdesign is hard to contain)

There are two approaches to your problem. There is a digital temp gauge available through Summitracing.com that turns the fans on and off at a temp that you select and also reads the engine temp.
Painless wiring makes a kit that uses a sender that screws into the head or intake and turns the fans on and off at a factory set spec. I think they make two different units with different on and off temps. The kit is available from Summit too. I don't think anyone makes a sender that reads the temp for your gauge and also turns the fans on and off.
