what is a 40 over 350 ( cubic inch ) ?

I'm not sure but a .30 over is a 355, so about a 357-358.

The engines they run in NASCAR are 358ci. And I think they're the Bowtie 350 block bored .40 over.

I always assumed the NASCAR engines were 400-size bore with a 327-size stroke. That would work out to 348, but add on a bit for overbores and such. Just figured that if they're gonna rev 'em to the moon, they'd probably go with a shorter stroke, and the bigger bore would allow larger valves.

I assume you mean a .040 over 350? A stock Chevrolet 350 with a 4.000" bore and a 3.480" stroke bored .040 would result in 357 (rounded off) cubic inches.
