is it okay to have a 200 temp on my bb.

Shouldn't be a problem unless it wants to go higher. Factory stats were 195º on many cars. If you are running a cooler stat and it wants to run 200 there could be a problem in the system but 200 won't hurt anything.

It's ok only if your thermostat is rated at 200. If your t-stat has a 160 F rating, then you don'r have sufficient cooling capacity.

Where is your temp sender mounted, intake or head? If it's mounted in the head and you're running a 180 thermostat that's about right.

it's good unless you are getting detonation.
if you want to knock down some better fuel economy numbers, try to get it to run around 230 degrees like a lot of late model engines do. the trick is keeping the cooling system pressurized and controlling detonation.
