I would guess $1500-3000 with no repair work

that completely depends on the shop. Call around and get quotes and then check the shop's finished work on a car they just completed. ask them what brand paint they use too. my shop would charge $5k+ for a complete paint, but we are high-end. it also depends on de-trim labor

You can't 'call around' and get quotes. Drive the car to some shops, tell them exactly what kind of job you want. All the trim removed or just masked? Cheap single stage or base/clear? Wet sanded and buffed to make it really smooth and shiny, or just leave as painted? (may have a little orange peel and imperfections) ask questions. I would guess $3000 to $5000 for a nice job.

I've shopped around for paint & body work for the last 2 months, from that experience I'd say you need to budget around $3000 minimum.

A crappy job on the top coat would make me nervous about the job UNDER that top coat. I'd add 2 grand padding to whatever quote you get just in case something is "found".....and something is always "found"
Have you really poked around this car and checked it out in depth? Bondo, crappy body work, stuff covered instead of repaired?
Only reason I mention this is because my car looked really solid but for two spots. Once we dug into it found 9 rust holes I would not have found without removing paint and that added just a bit of work to the job.
Good luck.

Thanks, I appreciate all the help. I think Im going to wait and have the car completely stripped to see if I unearth anything really fishy

Do it once, do it right...although when you do it "once" it can take a looooong time.
Better than wondering. Its good to KNOW things are solid.
Plus - Chevelle with a little patina and use isnt a bad thing. Roll it, be happy with it, save and work as time and money permit. Wish I had a driver. :(

Sure you can call around... i get calls all the time and i give rough ideas over the phone so they don't have to waist time going from shop to shop. i get people come to my shop to get an estimate for a complete paint and i first tell them the range and they are usually shocked and pass on the estimate.
Anyway, if I didn't have the paint connection or the money for the paint right away, i would build it without paint and drive it while i slowly fix it up then some day i would get it painted. spend your money getting the car on the road and enjoying it, then you can paint it later.. bring it to local shows too, in primer, who cares.. we all understand anyway
