what would be the widest tires i could fit in the wheel wells of my '71 without having to chop it at all?
What would be the best strip tires i could get that would still be street legal?

It will also depend on the wheel size as 17 or bigger can go to 6 and even 6.25 inches of backspacing if the rear axle is perfectly centered to the wheel wells.
With the 17 inch+ wheels you can get 295 to 325 wide tires to properly fit.
With 15 inch wheels 275 is the widest for proper fit but some put 295's on wheel rims of 8 inches and 5 inches of backspacing.
You will need to do a test fit to be sure the combination will work on your car as many cars are not centered well. My 69 SS is offset about 1/8 inch which means one side has 1/4 inch more backspace than the other side.
