I am wondering if anyone has a pic of the correct PS hoses and the routing placement for my 71 big block car.
Will a small block pump fit on this car if I use the big block brackets?

Yes, to the pump question.

Don't know about "correct" hose routing. I suppose they were put wherever they could go without getting in the way of anything.

One thing to keep in mind when you are checking your power steering hose routing. Be sure to move your steering wheel lock to lock and check the motion of the pitman arm and linkage with respect to your hoses. Where you might have a lot of clearance right on center, you might have a hard interference over near the corners.
