Strange question I think, but how would one go about installing zerk fittings onto poly bushings that don't come with them? Could you just drill a hole through the sleeve and bushing and install a zerk fitting in the sleeve? Would that be enough to lube the bushing on the bolt or would you have to 'score' or channel the inside of the poly bushing?

My assumption is that installing a zerk fitting would only be a plus if the poly is channeled.
I've heard that the polygraphite bushing are self lubricating and if you don't have your bushings yet you may want to check out Energy Suspension. I think they make a set of bushings with zerk fittings and channeles.
