I use CC Cleaner but I need to uncheck the area that keeps the history of what I've opened lately in various programs like publisher, word, excell etc. I'm not sure where that is.

2 selections on the left when you open CC - Windows and Applications -have a look there.
You may not be able to select specific items for programs as CC wasn't written to get everything.
Yuo might have a look at Revo (http://www.revouninstaller.com/) but use it carefully.

Thats my problem. I see those two selections but don't know what to un-check.

CC give you options based on what you have installed.
As your system is different than mine ,I can't tell you which to select/de-select to get your desired results.
I suggest you try different setting and see what results you get.
Make some useless stuff that'll install ad see what stays and what gets removed.
Yeah ,it's trial and error but all I can suggest as I can't see what's there in CC.

I there should be a basic item to de-select for Office 200X applications. I can muck through most of this but I need to have history for my wife. I'll look at the log and see what comes up.

Click on the Applications Tab, under the Aplications Sub heading, uncheck Office 2003, Office 2007, Office XP.

And if want to keep the Recent Documents Folder...

Click on the Windows Tab, Window Explorer Sub Heading, Uncheck Recent Documents.
