I have a new 1" aluminum and plastic radiator with a high dollar electric fan which is working great w/o a/c. I am going to install a/c and feel a thicher radiator is in order. Can someone give me the simple truth on the pros and cons of single pass vs double pass radiators please?

A single pass radiator will flow more coolant for a given pump pressure. More coolant flow means more cooling.

double pass should not be used for street use .. there better for high rpm applications .. if your running a late model ls conversion motor where both inlet and outlet need to be on the passenger side , then a by pass rad may be used .
other wise stick with single pass 2 row set up .
