I just replaced the front wheel bearings on my 67 Chevelle..piece of cake. Now I'm looking at the rear and it seems to be signifcantly more involved. Is this as complex as the service manual describes?

I think getting the bearings out would be the hardest part. I think some sort of slide hammer tool is required to pull them out of housing. Everything else is pretty straight forward.

you can rent the slide hammer, and it is real easy. just wondering why you want to replace them. are they bad? if you dont feel play in them i would just leave them alone.

As mentioned above, check the rear bearings for loosesness or play. If they are tight, then you are good. I would suggest replacing the rear axle grease seals. When you have the axles out check them for wear or spalling of the bearing surface. Usually the axle goes bad before the bearing.
