I pulled off my wheels, and what i found wasnt very pretty, not even a drum.... pretty much a completely crap set of brakes...just brake shoes...I know Baer makes high performance brake sets, which i plan on getting for the back(disc). Are there any parts that ill need for the conversion that arent included in the kit? Like backing plates or brackets?

Take a look at my webpage. You can perform the same swap from using GM parts much cheaper than what Baer charges you. <~~~ Just an option to go with if you feel you can perform the swap.
The way I look at this subject...why try to out engineer "the General" when you don't have to?

An in between option is a kit sold by Hinshaws (and others) that includes everything you need for rear 11-inch discs using all GM parts. It comes with everything but hard brake lines and a proportioning valve. The kit I got was around $525 and included parking brake cables! Everything was new and it bolted right on.
If you want similar results at a lower cost but a bit more work chasing down parts, Joe's method provides the same basic results as the kit I used.
