I know you can get a copy of a Pontiac build sheet from Pontiac Historical Services, Does Chevrolet have anything like this?

If your car was originally built in or shipped to Canada then GM of Canada will have a record of it. The documentation they have is not a build sheet. It's a record of the car (make,model) and all the RPO codes that it came with. It also has the ship to dealer. They can also tell you how many of that model were either made or imported.
