More converter like a 3000 will make it feel more torquey out of the hole. I bet your headers are 1.750 (1 3/4) not 1.625 (1 5/8). I think there is better camshafts out there, like the VooDoo series, but otherwise looks great.

Yes you are correct, they are 1.75 diameter primary tubes.

After we got her together I made a couple runs up and down the road and she felt really good. A lot of torque and real strong feel. Over the last few weekends, it just doesn't have the same power. Not sure what would cause such a change. Carb? Distributor? Any thoughts?

Also now that I think about it, its tough to keep her at idle when its cold. When we first turned the key it started right up. Now I need to keep it at about 1500 or 2000 for a few to get it to idle. Maybe I need to spend some more time on my timing and vacumn advance?

Are there any noises or symptoms?

What kind of oil have you been running?
What is your timing set at?
Do you have a new vacuum leak?
Have you fouled a plug? Have you pulled a spark plug?

No noises, as far as symtoms, just the hard cold start and the loss of power. The motor sounds great just doesn't have the same go it first had.
For oil I have Shell Rotella 15W-40 with a bottle of Comp Cam Break-In Additive.
I will check the plugs tonight and have to get back on the total timing. Not sure where we left it.
