is there any specific way in tightening headers or it dosnt matter (meaning do you skip a bolt then come back and tighten the rest up)

The generally accepted way is to tighten them as to make the thin flanges as flat as possible and not cause them to bow in any way.Most easily done by tightening from the center bolts outward.
