Temp rising? Is it doing it while idling? While cruising? Just how high does it get?

Verify that you don't have any coolant leaks, clutch fan is operating, fan shroud is installed, engine is timed correctly.

Is it running ok besides the temp?

I'd check the thermostat on a stove with a thermometer. Even though its new, you have a good chance its not opening at the rated temp. Half of the ones I've bought are junk. I have had to put 160 thermos in cars to keep the temps around 180, 190.

Put the thermostat in a bowl of water so it is completely submerged. Use a cooking thermometer so its tip is in the water about an inch or more in and heat up the water. There should be a clip on the thermometer so you can retain it to the side of the metal bowl. Then keep an eye on the thermometer while you watch the thermostat. It should be opening and then fully open very close to its rated temp. You can speed up the waiting process if you put hot water from the sink in first. Otherwise it'll take a while.
