Sounds like too much fuel in the bowls. Floats are probably set too high.

mabwyncote, I was playing with some different metering blocks on my Holley and noticed that, with no other changes, the metering blocks that had no 'vent whistles', would do the same exact thing. Stand on the brakes harder than usual and the engine would die as it came to a stop. Having been through this before, I just put in a set of vent whistles and the problem went away. The fuel in the rear fuel bowl washes forward and into the vent and then into the rear venturis causing a momentary rich/flood condition. Go to Holley's website and check out www.holley.com/HiOctn/ProdLine/Products/FMS/FMSCA/26-40.html. (http://www.holley.com/HiOctn/ProdLine/Products/FMS/FMSCA/26-40.html.) You need at least one of these in the rear float bowl. Use the longer one. They are very easy to install.
Good luck,

mabwyncote, I just tried to click on that Holley link. It didn't work for me. The Holley website has been a little finnicky lately so I'm not surprised.
Anyway, go to www.holley.com, (http://www.holley.com,) then to products, then carburetor accessories (under Fuel Systems) and scroll down to part #26-40. You can click on the part number to see a picture of what I'm talking about.

Have you thought about checking for a broken motor or tranny mount? This too will change engine r.p.m. upon take off and stop. Just a suggestion.
