As far as the SSBC calipers, I'll preface this by saying that I have NO personal experience with them BUT.....
Having read a various posts from folks who have used them I worry a bit about the small piston sizes (38mm for the "normal" and 43mm for the "HD"). Relative to the stock calipers, these offer significantly less piston area (even with the dual pistons). As a result, I'd be willing to bet you're gonna need a smaller master cyl than stock in order to get clamping pressures up. You'll also probably need a different (or adjustable) prop valve to keep the rears from locking up. I think the last time I did the math, something like a 1" bore master cyl and the 43mm piston calipers seemed "about" right based on the math. I'd worry about finding a M/C that would work well with the 38mm jobs, but again -- this is NOT based on personal experience. Hopefully someone with hands-on can chime in.
As far as the booster goes -- I believe the 11" booster will not clear tall valve covers on a big block, but the smaller booster will. Unfortunately, the smaller booster will also offer less power assist for the same vacuum. You could either run a dual-stage (tandem) 9" or 8" booster (basically 2 booster stacked up, so you get more assist) OR you could run a hydro-boost system (depending on how much vacuum you can pull.... and your budget....)
