My Fel-Pro gasket part# 1205 covers the top portion of my AFR head. I'm trying to maximaize the airflow of my intake to heads airflow without interruption. It has about a 1/16" to 1/8" lip over the intake port of the head. Will it be sufficient to gently file the inside of the gasket port to match the head and prevent the disruption of flow?

Do you have the gasket high enough?
The 1205 should fit the 195's perfect, the head & gasket should both be 2.09.
If so, I'd just buy the 1206. They are only about $15 & plenty big at 2.21 if memory serves.

Yep, here is the specs of the two gaskets:
FPP-1206 = 1.34 in. x 2.21 in. intake port.
FPP-1205 = 1.28 in. x 2.09 in. intake port.
