For all of you with the "oil pressure falls when accelerating" issues, I finally found out why my car would do it:
When I set the oil pump pickup height when building my 350, I installed the pickup on the pump, (engine upside down on stand) and then placed the oil pan on the engine. I pressed it down, without the gasket, and felt the pump pickup move. After removing the pan, I then moved the pickup an additional 1/4" higher, figured this was the correct height.
Guy who now owns my car pulled the engine and discovered I had the wrong pickup on the HV pump! The pickup 'tube' actually hit the bottom of the pan, and the pickup part sits much higher, so it was getting uncovered when accelerating. SO, if you're having this issue, you want to verify the pickup screen area is the lowest part hanging down.
