I have an SBC 400. The standard bore size is normally 4.125, correct? Now, I have speed-pro .030 pistons in it that I am going to re-use (they were already in it, and I see no damage on them other than to clean them up). So I made the mistake of getting rings that are for a 4.125 bore size, and the ring gap is way too big. Should I have gotten rings for a 4.155 bore (4.125 + .030 = 4.155) ? I really suck at this, I tell ya........

Yes, 4.125 +.030 is what you need. You should be able to exchange them for the correct rings.
