I have very limited knowledge about electrical systems. I watched the you tube video of the rebuilding of an alternator on this thread and it looked fairly straight forward. My question is: can you take a stock 60 amp alternator and rebuild it to 100 amps or more? Is it just better to buy a new or re-manufactured one instead?

Buy a new or re-manufactured one. The stock low amp alts are a 10si. The larger amp alts are a later model 12si and are designed to handle more current. If you want a alt with more than 140, use a CS series alt.
