the only way i've heard is to dissassemble the heads leaving the valves in place and try to wobble each valve with your finger and thumb.if you notice excessive play in the valve it means the guide is worn.if you try this with the heads on the block be sure you don't drop one!heh! heh!

Best way to check for guide wear is to remove the heads and disassemble them. Wear can be field-tested as bowtie455 has noted, by moving the valve back and forth and noting the movement. Valve must be held in open position, so that the seat doesn't influence the movement.
Best way to check wear is to measure the guide ID with a ball gauge and the valve stems with a micrometer. Remember too, if there is any guide wear at all, the valve faces and seats are probably worn too.

What exactly is the problem? What heads are these? Bronze or cast guides? What size cam, and what rockers are you running? The last question is due to concerns with rocker arm geometry. Bad geometry can eat up guides real quick, especially with hard stainless steel valves running through cast guides. A lot of cam lift could also cause the retainers to hit the valve seals causing seals to break.
