How do I chose which head gasket bore to use on a 350(383) bored .030 over. So far all I can find is that the gasket bore size needs to be larger, but there are so many different sizes to choose from. I want one with around .028 compressed.

Most replacement head gaskets are designed with large enough bore size to accomodate a cylinder that has been bored to .060" or larger.

For a 350 the most common sizes are 4.100" and 4.166". Most shims are 4.100 and composites are 4.166.
GM has a .028" gasket.

Pat I was just looking at gm .028 gaskets and they offer 2 types. (1)stainless on one side/graphite on other (2)stainless on both sides.
Is one better than the other?

I don't know. I'm using Victor's .026" gasket which is graphite on both sides.
