I recently purchased a 1971 chevelle and want to convert her to a Pro-Touring setup. She currently has Summit Radial Trac - Front - All Season SR4 Steel Radial P205/70R15 95S M+S tires andRear - P275/60R15 107S M+S Performance Steel Radial M+S tires on 15" Cragar SS Mags. This is more of a street/strip setup I think.
I have tried to do the research here, but I am just not very knowledgeable about this and am quite confused, lol. I like the staggered look, but am not sure about how that affects the performance (handling, control, and cornering) of a Pro-Tourer and if that should be done. I am looking to upgrade from stock suspension to a SC&C Street-Comp Stage 2+ PLUS Package and CURRECTRAC Rear (and 4 wheel disc brakes) in the future, if that affects choices.

So...
- What type of wheel/tire setup do you suggest to make it a ProTourer (something that will not take away from the performance of the upgraded suspension)?

Go with 17's at least (to clear shock mount and larger brakes). You could probably do 17x9.5 front and 17x11 rear. This set up needs to be measured perfectly, and still may require trimming.
