Can anybody tell me how difficult it is to remove the evaporator assembly on a 1970 Chevelle.

With the engine in?? Most likely you'll need to take the passenger side inner fenderskirt off, and the hood and the passenger side hinge, and you might be able to get it out of there. Don't think it's a piece of cake, but not too hard, but time consuming.
