power on oversteer

Hi guys, I'm new here but have had many muscle cars in the past--GM, Ford and Mopar. I recently picked up a '69 Chevelle SS. The condition is not quite what i thought it would be, so I am looking for a little input/opinions on how to proceed with the car.
I was looking for an honest older car, showing its age but was more or less unmolested. A survivor.
What I got has a pretty amateurish restoration, some new parts mixed with used stuff. For instance, really well done head liner and carpet but poorly redone seats (not sure if they have been repaired/resprayed or new covers, they look real funny) with really worn brake pedal and gas pedal and pretty tired dash and window trim. Under dash wiring is mess.
The body is good but paint poor, and the undercarriage sprayed with gloss black and pealing everywhere. It looks like ish under there (I really hate when they do that!!)
Something is bad with the paint too. It looks like it has pine sap on it but it is under the paint!
I don't want a pristine show queen. I want something fun to drive, don't care if it gets rained on once and a while and dependable rather than super fast in the quarter. I want to have the old car driving experience--you can't really describe it but its just fun--right?
Motor, trans and brakes are sound. also not a numbers matching car.
I just look at it and think with a little more time here and there while it was being done, it would be a great car but like with the paint I can't go back. It will just have to be redone to be right.
My thought is to try and make it look like a survivor and make it into what I want OR do I sell it, take my licks and look for something else?
