What type of pan would offer the most ground clearance? My bud just damaged his pan from a dip in the road. I put the shallowest one I could find on there (like 7"?), but it still too deep. Would like a racing type pan work?

Definitely not making an oil pan.
Is a Vette pan shallower? Happen to know the dept?
I'm looking at some circle track pans, some are under 7" deep. Any reason not to run one one the street? I could take the trap door out if needbe.

The Corvette is a little under 7" from the rail to the bottom. Probably not enough to help you much. The deepest part is approx 11" front to back. Looking through Summit Racing a 7" pan is the shortest I can find. D'Oh

put a crossmember between the framerails right in front of and slightly below the oil pan to make that the lowest point on the car. put an angled "skidplate" on it that will allow it to bounce over anything it hits without doing any real damage.
