Wondering if I can use 1/8" wall steel to build a rotis. Seems that most people who are building them are using 3/16", but I would think for a body that 1/8" would be ok..

It's your body, you can use 1/16" if you want. Personally I would want to be sure it would hold, so if everybody is using 3/16" and have no problems, why risk it?

3/16 here. I used 1/4 on one, but the tubing was only 2inch square.

Ya, I see lots of different plans, some call for 2x3 retangular and others only 2x2 and 2.5x2.5. Looks like it's going to be about $250 in steel.

The decision on wall thickness (1/8" or 3/16") and construction depends on just how much weight you plan to put on it.

Will be used like this?

Or something more in line with this?

Constructed correctly the 1/8" wall tubing is adequate.

That is the key phrase - "Constructed correctly"

I used 3/16" wall and two engine stands (rated 1000lbs each) from Harbor Freight. My total cost in parts was $400.00. One Day to build it. It worked great.
