If I stroke my engine to a 383 will I still be able to use my stock 350 oil pan?

Yep, that's what I'm using.

I've built about 20 of those thinbgs, used a stock or stock type pan on all of them. Just remember you'll need to do a trial assembly with no rings or seals to make sure it works.
