I can't find 3 3/8" and 2 1/16" holesaws anywhere. Where can I get them? I am trying to put my autometer gauges in and don't really want to break out the plasma cutter if I could use holesaws.

Those are common sizes. MSC industrial supply carries them

and

I would think you could find them locally.

Don't know about the 3 3/8", but 2 1/8" (if 1/16" larger will work) is the size you use for door locks, and it can be found pretty much anywhere.

Find a construction supply outlet for contractors. Right down the road from my work is an outfit called whitecap, they have everything you need. I have seen their holesaw collection and was actually checking them out the last time I was there.

For you 2 1/16" I would just use a 2" and do a little light filing by hand for a solid fit and on the 3 3/8" on i would just use a 3 1/4" and again file by hand.

Depending on what you are cutting, and how long you want the tool to last, you may also be able to use a "fly cutter". This has a cutter bit like a lathe on an adjustable arm. Set it to whatever radius you want and turn away.
