I just measured the piston to deck height on my 454 and came up w/ .0022 or is it .022 ? Anyway I measrued the front of the piston, bottom, rear and top and to my surprise they were all the same.
Is it safe to assume that it will stay the same after the new 4.25 crank , pistons and rods are installed?

never assume when building an engine, if the pin height is known on the replacement pistons you may be able to calculate whet the deck height will be. The best bet would be to trial assemble the engine and check it, you can then choose the headgasket thickness that works best. .020-.025 is about average for a stock block from what I've heard and seen. If you're boring the block it will need to be done before trial assembly, during the trial assembly check your rod side clearance and crank thrust clearance also, and look for any interferance with the larger stroke crank. just some suggestions,
